Our Wholesale Highland Beef customers enjoy the best value and greatest ability to customize their order, like how thick you want your steaks, what cuts you want, what roasts you want or which you want ground into burger packages. Customers get all the bones and organ meat if they select them when we work with you on your cutting instructions. Our amazing butcher will help walk you through the process of determining your cutting instructions, and it's easier than you think!

Often times a family will split a “whole beef” to gain the savings but receive a smaller quantity. All cuts are provided in single serving increments so it makes splitting up a quarter, half, or whole beef quick and simple. We walk each customer through the options and help guide you through the process. We are a SMALL beef producer and have a limited amount of beef to offer each year so reserve your beef early to ensure we can meet your needs.

**Please note our wholesale beef prices are updated quarterly (last update September 2022) and are based on the average grass-fed and finished prices released by the USDA (click here to view) each month. We work hard to keep our pricing as affordable as possible, however, due to rising operating costs we have been forced to increase our prices significantly. We are thankful we are able to keep our prices below the national average, however, we are unable to secure pricing for future butcher dates as it is impossible for us to predict the market at this time. Purchasing a quarter of a beef is a good option if you have limited freezer space or it is your first time purchasing beef wholesale. The average hanging weight is 130-150 pounds but this varies animal to animal and the hanging weight can vary as much as 20 pounds either way. You will take home around 90-110 pounds of packaged beef.

  • Recommended for families of 3-4 
  • Will take up half of a small chest freezer or 25% of small upright freezer (14 cu. ft.) 
  • Customers will work directly with our butcher to determine what specific cuts on beef they prefer.
  • The price per pound is based on hanging weight of animals after harvest. All butchering costs are included in that price. 
  • Average cost for a quarter beef range from $1000 to $1275. This varies of course with the size of the animal, but you always get what you pay for! 
  • There is a $250 deposit required to secure your order. 
  • Pick up at farm or butcher shop for 1/4 order.




If you’re thinking about purchasing a half of a beef, many of our customers get a family member or friend to go in with you and each get a quarter for a better price! While the package weight is different for each animal, over the last number of years the average final packaged weight of a half has been around 175 pounds of beef. The average hanging weight is 250-300 pounds but again, this varies animal to animal and the hanging weight can vary as much as 50 pounds either way. 

  • Recommended for large families with 2 adults and hungry kids
  • Will take up to 50% of a large upright freezer (20 cu.ft.) 
  • Custom Cut to your specifications.  We will help you with this!  Our butcher is amazing!
  • Beef prices for a half average between $2000-$2500 but can be more with larger animals. This will vary of course with a larger or smaller animals. 
  • Half beef orders require a $400 deposit to secure your order.
  • Pick up at farm or butcher shop of 1/2 orders




If beef is what’s for dinner at your house then this is for you! Many of our customers select a whole beef every year, whether its all for them, like we do in our family, or they are splitting it with another family, the whole beef is your very best value. It is our lowest price per pound and like our half beef you get custom cutting automatically included with your beef package. While the weight varies by animal, our average final packaged weight of a whole beef has been between 350 to 400 pounds. The average hanging weight has been between 520-600 pounds but again, this varies animal to animal and the hanging weight can vary as much as 100 pounds either way. 

  • Recommended for large families with 2 adults and hungry kids or split between two families
  • Will take up almost all of a large upright freezer (20 cu.ft.)
  • Custom cut to your specifications.  We will help you with this! Our butcher is amazing!
  • Whole beef costs are between $4000-$4800.
  • Whole beef orders require a $500 deposit to secure your order.
  • Pick up at farm or butcher shop for Whole Beef orders.
